Tomato rice

   Ingredients:

  • 3 handful aval
  • Coconut milk
  • Shredded coconut
  • Shredded ginger
  • 2 chopped tomatoes
  • Cumin and Pepper
  • Curry leaves
  • Coriander leaves
  • Pink salt if needed.
Preparation:

Soak aval in coconut milk for half hour.  Milk should cover the aval 1 inch above. Mix ginger, shredded coconut and cumin pepper powder. Grind tomatoes to a paste. Mix with soaked aval. Garnish with coriander. If needed, add mustard, urad and green chilies (if absolutely needed) for tempering.
